Arnold Bennett (1867-1931), a British novelist, often visited the London's Savoy Hotel and enjoyed an omelette filled with smoked haddock. The hotel chef created the dish below for him which remains on the Savoy's menu today.

Ingredients
Ingredients for two servings:

  • 2 tablespoons butter
  • 2 teaspoons flour
  • 2/3 cup milk
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon salt and pepper to taste
  • 5 eggs (separate white and yolk from one egg)
  • 6 ounces cooked, smoked haddock

You don't put cream in an omelette, otherwise it's scrambled egg.
The butter flour and milk are used to make a béchamel sauce. The fish (Finnan Haddock)is poached in the milk and then the milk is used to make the béchamel.
